I had a quick look through and decided to try these.
Bounty Cakes.
Ingredients list wasn't big, I already had everything except the coconut milk.
butter , sugar, eggs , coconut milk , coconut , SR flour ,baking powder
Drop into muffin cases, ¾ full.
The recipe says it makes 12, my mixture only made 10.
Bake gas 3 for 20 mins.
I didn’t like the sound of the topping in the book, so I made this ganache instead.

Melt the chocolate with half the cream in a bowl over a pan of hot water, set aside to cool slightly.
Beat the remaining double cream.
Fold the chocolate mix into the whisked cream.
Pop in the fridge for 20 minutes to stiffen up, you need it stiff enough to pipe.
Then just pipe onto the cakes and top with a sprinkle of coconut.
That is a gorgeous cake plate - I love it... am always on the look-out for that sort of thing!!!

ReplyDeleteGood luck with the tomato plants - just keep them well watered and they'll be fine - you might need to tie them up if they get too tall and flop over! I have tommy plants too - hadn't thought of photgraphing them and following their progress to keep up with the maintenance - maybe we should set up a tomato watch across England - see if the southern ones grow faster than the northern tykes... ? ;) bit o'fun!
