Just made these, and damn they are flippin yummy.
Beetroot Muffins.
8oz SR flour
2tspns baking powder
5oz sugar
4oz sultanas
2-3 med beetroots,peeled and grated
1/4pt oil
2 eggs
1 tspns cinnamon
zest of 1/2 orange
juice of 1/2 orange
Mix flour,baking powder,sugar,cinamon.sultanas,beetroot,orange zest.Beat eggs,oil,orange juice- add to dry mixture.Spoon into muffin cases. Bake gas 4 for 25mins or firm to touch.
Frosting.
2oz butter
4oz icing sugar
4.5oz cream cheese(philadelphia)
a little orange juice
beat all ingredients together , pipe onto cooled muffins.Top with a little finely grated orange.
Eat.

Hmm, not a beetroot fan but I may be tempted by these, especially the frosting! What is the main flavour of the muffin?
ReplyDeleteyou cannot taste the beetroot AT ALL, it just makes them a pretty colour and makes them really moist, they taste of the fruit and the topping.

ReplyDeleteCould one leave out the orange or sub it with more lemon or lime maybe, as we have a friend who adores muffins but is allergic to oranges ...even the smell makes her sick. ...also is it raw or boiled beetroot.
Angie, I am pretty sure you could substitute any of the parts for something else, the orange works well with the fruit, so just think about what flavours will go together. you can leave out the fruit alltogether and use chocolate with the betroot.
ReplyDeleteAll the recipes I found said to just peel and grate the beetroot, so I assumed it was raw. However I had already popped them all, I had about 8, in a big pan to boil and by the time I found some recipes they had been boiling for about 10 mins. I fished 3 out and left them to drain, they were still pretty hard..the rest took a further 35 mins to cook. So in answer to your question,my beets were almost raw lol
