Here they are Lavender Scones with cream and lemon curd.
Firstly you need to make some Lavender sugar. I buy bags of dried lavender buds from my local health food shop. I fill a small container with caster sugar, I think it holds about 10-12 ounces. I then add 4-5 decent tbspns of lavender. Pop the lid on and give it a good shake. ideallly leave it in the box at least a week before starting to use it.
Scones.
8 oz SR flour
2 oz lavender sugar (shake the box first)
1 tspn baking powder
2 oz butter
1 egg
4 oz milk
Rub the flour, bp and butter together, add the sugar. Beat the egg with the milk.
Add some of the egg milk mix and start to pull the dough together. Add more liquid and keep mixing.
Save a little of the liquid.
Turn the dough out onto a floured board, knead a little but be gentle.
flatten out with your hands to about 3/4 of an inch thick, cut into triangles.
Brush the tops with the remaining egg/milk and sprinkle on a little more lavender sugar.
Bake at Gas mark 6 for 10 -12 minutes.
when cool slice open and topped with whipped,thick cream and a dollop of lemon curd.
