Zucchini Bread....(or for us in the UK, Courgette Loaf)

Makes 2 loaves...

3 cups plain flour
1 tspn salt
1 tspn baking powder
1 tspn bicarb of soda
3 tspn cinnamon
3 eggs
1 cup vege oil
2 cups sugar
2 tspns vanilla
zest of 1 lemon
2 cups of grated courgettes
1 cup sulatanas
1/2 cup of walnuts.



Whisk the eggs,sugar,lemon,vanilla and oil.

Mix all the dry ingredients, stir in the wet ingredients.

turn into 2 loaf tins, greased and lined.

Bake Gas mark 4 for 50 minutes.



I am not altogether convinced that cakes should have green bits in them, you could of course avoid this by peeling the courgettes first, it won't alter the taste. This is not a stunning nor exciting cake, but it is a very pleasant tea time cake, perfect with a cuppa.

  1. I got a similar recipe to this off an American site. My eldest was wolfing it back till my OH told her there was courgettes in it - then she remembered she didn't like courgettes and wouldn't touch it. Grrr. I like this one - has a slightly gingery taste I think. Yum!

    Even telling my middle dd that the green bits were bogies didn't put her off *g* she's always asking when we are making it again.

  3. Hmmm, someone brought courgette cake into work but I didn't try it as it looked too green (I like the vegetables in my cakes to be hidden!). This looks good though so I may try it!
    Just seen your comments on Doone's blog...poor Ian, how the hell do you manage to break BOTH feet?...and poor you - A&E on a Saturday night? Not good. x
